Introduction

Hazard Analysis and Critical Control Point (HACCP)
HACCP is a system of food safety assurance based on the prevention of food and feed safety problems. It is accepted by the food and feed industry as the most effective means of controlling foodborne safety issues and is a legal requirement for food businesses at any point after primary production. It is a management tool that is not restricted to large organisations and can be used to assure food safety at all stages of the food chain, including in agriculture.
Pests
The principal causes of spoilage in stored grain are fungi, insects and mites. It is important that any pests found are correctly identified, monitored and controlled appropriately. A list of currently approved products can be found at www.pesticides.gov.uk.

Drying and cooling
Under certain conditions of temperature and moisture content, fungal growth may occur rapidly and temperatures above 15°C increase the risk of insect and mite populations developing. Cooling permits grain to be stored at slightly higher moisture contents and effectively increases the safe storage time.
